Information This coffee comes from the Ijen highlands, in eastern Java, a volcanic region known for its fertile soil and dry tropical climate—an ideal terroir for coffee. In this area, producers grow coffee alongside fruits, vegetables, and tobacco. Producers, often small artisanal farms, focus on cultivating and harvesting ripe cherries. The freshly picked cherries are then evaluated and sent to the Bottolingo wet mill, where they are sorted again before drying. Only the most promising cherries then undergo natural patio drying. In the cup, you discover an uncommon Java, with a pronounced acidity and fruitiness, but also spicy notes of cedar and a finish reminiscent of green tea. |
